Update Your Website!
Did you know that the PAII logo changed several years ago? Many
of our members are still utilizing the following logo that is no
longer in existence:

PAII's logo has been redesigned and is reflected on our website
in all of our membership materials, on press releases, our letterhead
and on each publication. Our goal is to have the PAII logo become
a recognizable "brand" for the industry and consumers
alike. So be sure you are associating yourself with the logo that
is recognized for professional innkeeping. You can download the

Forum Digest:
Tax Rate Increase, & More!
If you have not had time to log on to the

here are some of the interesting topics that have been discussed
this past week.
Tax Rate Increase
Our tax rate is increasing by 2% July 1st. I have several reservations
that will be affected by the increase. Would you charge the lower
rate because that is what was quoted or would you charge the higher
rate?
How Do You Handle Reservations If You Need To Close?
My husband's health has deteriorated and we need to close our B&B.
We have guaranteed reservations beyond the time frame of our intended
closing date. What is our legal obligation to these folks if any?
We also have gift certificates and will contact the purchasers and
refund the monies somehow.
PAII Welcomes Our New CEO Jay Karen
2 weeks ago we sent an an INNfo to all members announcing
that the Board of Directors had hired a new CEO to lead PAII forward.
We want to welcome Jay Karen who you can read about in full on our
home page ("www.paii.org) where
we have posted the press release that we sent out to the media.
We are thrilled to welcome Jay. His first day in New Jersey was
Thursday June 7, 2007. He brings enthusiasm, vision and an understanding
of how our industry works.
Catering Surcharge
We are having a lot of "extra" activates at our B&B.
I am not allowed by law to actually do the catering for the events,
so I hire an outside caterer. I have the event coordinator talk
directly with the caterer. I have been asked on more than one occasion
by the caterer if I "expect" any payment. I have not been
doing that, but am now considering it. The caterer is bringing in
everything, including the tables, chairs table ware, etc. We just
rent out the grounds and rooms. We require the event to take all
four of our rooms for two days to book a large event, plus a fee.
Anyone have suggestions?
Chef Available In Portland, Oregon
One of my relatives recently graduated from New England Culinary
Institute and is looking for a position as a cook/chef in a bed
and breakfast in the Portland, Oregon area. What is the best route
she should take in order to contact those inns?
About B&B
This is a very interesting website and offers a great deal of information
to our industry. It is full of advertising but all of the sites
are getting that way. I am sure all of the PAII members will enjoy.

Blogs
Steve and Katy Hiatt, who own Bottger Mansion of Old Town in Albuquerque,
NM presented innkeepers with blogs at the PAII convention in Myrtle
Beach. It was a great presentation and if you were there you learned
a lot. We have a blog and we are receiving more clicks on our website
from our blog than from most of our directories. The world is changing
and we all need to change with the tide. Thank you Steve and Kathy

Travel Articles
I was sent an email of a marketing co. called Travel Articles and
they presented me with putting up a free listing in their directory
called www.innkeepermarketing.com.
Has anyone ever heard of them? I didn't respond, but was wondering
if they are legit.

de Provence Scones

in Manheim, PA offers this delicious recipe for Anne's Herbes de
Provence Scones. 10 Scones
Ingredients
2 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons Herbes de Provence*
2 1/2 tablespoons buttermilk powder
1/4 cup butter, cut up
2/3 cup water
1 large egg
Directions
Preheat oven to 425 degrees. Grease a pizza stone or cookie sheet.
In a large bowl, combine flour, sugar, baking powder, baking soda,
salt, and herbes de provence. With pastry blender, cut in butter
until mixture resembles coarse crumbs.
In a small bowl, beat water with egg. Pour into dry ingredients
and stir with fork until mixture comes together. Drop by quarter
cupfuls onto baking pan. Bake 14 to 16 minutes until lightly browned.
Transfer to wire rack to cool.
* Herbs de Provence is an assortment of dried herbs said to reflect
those most commonly used in Southern France. The blend can be found
packed in tiny clay crocks in the spice section of large supermarkets.
